Roasted Butternut Squash

2 medium butternut squash, halved lengthwise 4 teaspoons brown sugar kosher salt black pepper 4 teaspoons of butter
Step 1 – Preheat oven to 400 degrees F.
Step 2 – Place butternut squash halves (flesh side up) on a large baking sheet. Remove seeds from Squash. Now Place 1 teaspoon butter in the middle of each squash. Sprinkle brown sugar on each squash. Season with salt and pepper. Now roast squash for 50 to 60 minutes.
Butternut Squash Soup
Preparation – 20min Cook- 40 min Total – 1 hr Yield- 6 servings
1 3 Pound Butternut Squash, Peeled 2 tablespoons unsalted butter 1 medium onion, chopped 6 cups chicken stock salt black pepper Nutmeg
Cut squash into small pieces. In a large pot melt some butter. Add onion and cook until it gets translucent. now add squash and chicken stock. bring to a simmer and cook about 15 to 20 minutes, until squash is tender. place squash chunks in a blender and make a puree of it. place squash in a serving dish. season with salt, pepper, and nutmeg.
Roasted Sweet Potato with Honey and Cinnamon
Preparation time: 15 min cook time: 30 min Total: 45 min
Yields: 4 servings
Preheat oven to 375 degrees F
Place a single layer of sweet potato on a roasting tray. Drizzle some oil, salt, black pepper, cinnamon, and honey over the potatoes. Roast in oven until tender (or 25 to 30 minutes). Now transfer sweet potato to a serving plate and drizzle some more extra virgin olive oil over it. Serve
Vanilla Scented Sweet Potato Puree
Total time: 30 mins Yield: 4-6 servings
1 pound sweet potatoes 2 teaspoons salt 1/2 teaspoon black pepper 1/2 stick unsalted butter 1/2 vanilla bean
Place the potatoes in a saucepan, add 2 cups of water, salt, and black pepper into it, cover the saucepan with a lid. Bring to a boil then return to a simmer, cook for about 20 minutes. Now add the potatoes into a food processor (not liquid) and make a smooth puree. Add butter and vanilla bean seeds to the puree and again mix all the ingredients until you get a smooth paste.
